No bad spots

Yesterday was an off day for me, so no workout. I had a great day spending time with the kiddos. Although we had a Dr. appt. and some errands to run, but we still had time to play and run around outside. It was also a day of healthy eats and limited sugar. For all of us. After Sunday’s day of treats, it was a welcome relief for our bodies.

Breakfast was whole wheat pumpkin waffles as detailed on my previous post. Super yummy!! Lunch was a mixture of leftovers I found in the fridge – quinoa, black beans, salsa, and sliced avocado. I was so excited to find the avocado – I thought we were out. It was in the very back of the fridge – and it was perfect. No bad spots. How lucky was I?? My little Peanut was lucky too as he shared some of it with me.

3:00 came around and the kids and I were getting the munchies. I wanted to pack some fruit and veggies in them, so we whipped up a smoothie with strawberries, blueberries, bananas, spinach, and yogurt. I added protien powder to mine and it lasted me until dinner.

For dinner, I made roasted broccoli and zucchini. We also had tofu that I marinated in soy sauce, honey, sesame oil, rice vinegar, and red wine vinegar. The kids and I loved the asian flavor! Tofu is something fairly new that I have added to their diets and I was surprised when Little Peanut began eating it and Punkin took a few bites before proceeding to gag and then spit it out. It’s a work in progress. They ate a ton of broccoli though, and that’s what really makes me happy!

Here is my plate…Tofu just doesn’t look as good as it tastes. What a shame.

While making dinner, I also got a little food prep in for the week. Roasted beets and more quinoa! I bought the beets last week and never got around to making them, so I chopped them up while the kids were playing and put them in while we were eating. I am relieved to have some food to take this week that doesn’t take much thinking.

Just look at these two cuddling on their Mickey Couch. It doesn’t get any sweeter than this!
